Good Eating Monday: Oriental Ramen Noodle Salad!

Today's Good Eating recipe is for Oriental Ramen Noodle Salad. 
Sometimes also called, "Asian Ramen Salad," it's quick & easy to put together using a combination of packaged slaw, sliced almonds, green onions, minced bell pepper, frozen peas, Mandarin oranges, Ramen noodles and a delicious sweet-sour vinaigrette!

This recipe is one I devised by combining the best of 2 or 3 different Pinterest recipes for it, so what I'm sharing today is now my own recipe!
The Air Force kids who came over on Sunday loved it! A few who normally dislike traditional mayonnaise-coated slaw, raved over this salad and had seconds!
I served this salad with slow-cooker Hawaiian pulled pork sandwiches.

Oriental Ramen Noodle Salad

Ingredients:
2 packages of slaw mix, any style
2 packages of Ramen noodles
5-6 green onions, minced (or more to taste)
1/2 cup frozen peas, thawed
1/2 cup finely minced bell pepper, any color
1 4oz package sliced almonds (or 1/2 cup)
1 15oz can Mandarin oranges, drained but save 1/4 cup of juice.

Dressing:
1/3 cup olive oil (or other)
1/4 cup juice from Mandarin oranges
3 Tablespoons Apple Cider Vinegar
3 Tablespoons Rice Vinegar (or just more Apple Cider Vinegar)
2 Tablespoons Lite Soy Sauce
1 1/2 teaspoons Sesame Oil
1/4 teaspoon ground Ginger (powder)
1 Tablespoon ground fresh Ginger Root
1/2 teaspoon Red Pepper Flakes
1 to 2 Tablespoons Roasted Sesame Seeds
1/2 cup cane sugar

Directions:
*In a skillet: break up 2 packages Ramen noodles in small pieces and combine with sliced Almonds and over med-high heat, "roast" for 5 minutes or until almonds lightly brown.  Let cool.

*In a large serving bowl: toss together slaw mixes, minced green onions & bell pepper reserving Mandarin oranges to toss later.

*In a 2 cup measuring cup or a small microwaveable bowl: combine olive oil, Mandarin juice, vinegar, soy sauce, Sesame oil, seasonings & Sesame seeds. Heat in microwave 45 seconds to warm up, then add cane sugar and whisk until sugar is dissolved.
Set in freezer for 5 minutes to cool off while finishing salad.

*Now add roasted almonds & Ramen noodles to slaw mix and toss to combine. Top with drained Mandarin oranges & add cooled dressing mix and toss again until coated. Cover and refrigerate at least 30 minutes prior to serving.
Make a lot; serves a 8 to 10 easily.
Great for a pot luck dish!

This salad lends itself to whatever additions you want to make:
You can use broccoli slaw, instead of cabbage or a combo of both
Use Edamame instead of peas
Add extra carrots using matchstick carrots
Add minced red onions
Add more red cabbage or Radicchio
Add sunflower seeds along with sliced almonds
The most important thing is the dressing and I think the flavor of the Sesame Seed oil one of the most important elements, so don't skip that!
