Good Eating Monday: Hawaiian Fried Rice!

Happy Monday!
 I decided today was the day I was going to conquer organizing a  box full of typing paper packages sitting on top of the filing cabinet.
It's a ream of paper = a box of 10 individually wrapped packages of white typing paper.
Probably enough paper to last us 10 or 15 years. 
A friend of ours gave us this box of paper probably a year ago and he had 4 or 5 more at his house of his own and it's sat waiting for me to figure what to do with it.
So today is the day I finally made a decision about where I wanted to store that paper, so I unloaded the box and stacked the packs in the storage closet where's it's accessible, but not in that box, so the box is gone and the filing cabinet is finally clear.
Whew! That's done. 

Today's Good Eating Monday recipe is Hawaiian Fried Rice!
What makes this fried rice special is the tasty soy sauce & sesame seed oil favor stirred into this mix of rice, red Bell pepper, ham & pineapple & green onions! 
It's a great recipe for that leftover Easter ham! Or--to make it really Hawaiian, use diced Spam!
I was looking for something to do with ham on Pinterest that wasn't a heavy cheesy type of casserole and I found this! It was yum!

Hawaiian Fried Rice
Ingredients
4 Tablespoons Low Sodium Soy Sauce
1 Tablespoon Sesame Seed Oil
Optional: 1 teaspoon hot sauce or sub red pepper
1/2 Tablespoon Olive Oil
2 cups diced ham (or Spam)
1 red Bell Pepper, seeded and diced
6 green onions, white & green parts separated
3 cloves garlic, minced
5 cups steamed rice, hot
3 large eggs
1 15 oz can pineapple chunks, drained

Directions:
In a small bowl: combine soy sauce, sesame seed oil and, if you choose to use it, hot sauce.

In a large skillet over med-high heat, heat olive oil & add garlic, sauteing for 15 seconds to favor oil, then add ham, Bell pepper & white part of green onions. Cook until ham is browned & pepper is crisp-tender.  
Push ham mixture to one side with cooking spatula and add eggs and stir until lightly scrambled and set, chopping them into small pieces, then mix into ham mixture. Add rice and stir to combine.

Now pour soy-sesame sauce over rice-ham mix, add drained pineapple chunks & green part of onions and stir together untiul well combined and rice is well coated with sauce and pineapple & green onions are hot.

Fried rice is very flexible, so you can replace eggs with frozen green peas or use chopped fresh broccoli or any other veggie you like.
The key thing that makes it Hawaiian is the ham & pineapple and
the nutty flavor of sesame seed oil!
