Good Eating Monday: Slow Cooker Chicken Parmesan!

Chicken Parmesan in a slow cooker, you ask? 
Yes and this recipe is fabulous!  Everyone on Sunday loved it.
 It's super easy, too!
It just takes diced tomatoes, tomato paste, garlic, Italian seasoning, bread chicken pieces and a 8 oz block of Mozzarella cheese!
I did add fresh sliced green Bell Peppers and slicked baby Portabella mushrooms to my sauce.
And I used breaded chicken tenders, thawed, then cut in half, though, because I wanted better pieces.
You should allow a minimum of 3 hours and 15 minutes prior to serving time to make this dish:
 the sauce is cooked alone first for a couple hours, then the chicken is added for the last hour prior to serving, then 15 minutes before serving, you top it with Mozzarella slices!
(Do not use shredded cheese for this recipe!)

Slow Cooker Chicken Parmesan
Ingredients:
1 bag fully cooked Breaded Chicken: nuggets, tenders or slices, depending on how many you want to serve.
1 8 oz block of Part-Skim Mozzarella Cheese, sliced in 1/4 inch slices.
For Sauce:
1 28 oz can Diced Tomatoes
1 15 oz can Diced Tomatoes with Onion & Garlic 
1 6 oz can of Tomato Paste
2 cloves garlic, minced
salt & pepper to taste
1 to 2 teaspoons dried Oregano
1 to 2 teaspoons dried Basil
Optional:
1 fresh Bell Pepper, sliced into strips
1 cup sliced fresh Baby Portabella Mushrooms
(If you're using fresh Basil and Oregano, you'll need to snip a heaping 3/4 cup.)

Directions:
1)  Spray slow cooker with oil cooking spray and add all sauce ingredients: diced tomatoes, garlic, seasoning, optional peppers & mushrooms.
2)  Cover & cook on high 3 hours, adding chicken after two hours to cook for the last hour in the sauce.
(Don't forget to boil up some spaghetti noodles!)

3)  15 min prior to serving, top chicken & sauce with cheese. Cover and let melt. Using sliced cheese is very important for getting that delicious gooey, stringy cheese you want on Chicken Parmesan! 

4)  Serve over spaghetti noodles with sides of garlic bread and salad!

This recipe is a keeper at my house! It was terrific! It was a great recipe for me, too since I had green bells in the garden to use and tons of fresh Basil & Oregano that need using!
We're eating the leftovers tonight!
