Good Eating Monday: Bread Machine Banana Chocolate Chip Bread

Image
In summer I prefer to not bake in the oven, but I have a bread machine and decided to try out some Pinterest sweet quick bread recipes for bread machines! The bread machine does all the work, baking up a cute little Banana Chocolate Chip loaf! It is helpful, while the machine is first beginning to mix the ingredients, to open the lid and, with a rubber spatula, scrape the edges down. You need a Bread Machine model with a "Quick" setting on your machine and "Light" crust .  And it's helpful if it also has a " Bake" setting in case your bread takes a little extra bake time.  (I have a new Black & Decker model that does.) Your bread should come out looking like banana bread, as in the photo.  Do make sure your bread machine has a setting to make quick breads. Some older machines don't. The recipe book that came with it will include a banana bread and cake recipes if it has those settings. (photo is my own bread) Bread Machin...

Good Eating Monday: Maraschino Cherry & Chocolate Chip Shortbread Cookies

Image
This recipe was a new holiday cookies recipe I tried from Pinterest for the 2016 holiday season! It's a shortbread, so it's a mild, buttery cookie with a festive touch of Maraschino cherry and rich semi-sweet or dark chocolate bits! They're a "refrigerator cookie," meaning you mix it up, roll it up in wax paper, refrigerate then cut and bake a couple hours later. They're best made in advance before serving--as much as 2 to 3 weeks and should stored in the refrigerator until you're ready to put them out. They do get a richer flavor over time! Shortbread cookies should be made with real butter for best performance & flavor! Maraschino Cherry & Chocolate Chip Shortbread Cookies Ingredients: 1 cup Unsalted Butter, softened at room temperature. (that's 2 sticks) 1/2 cup Confectioners Sugar 1/2 Tablespoon Vanilla 1 cups all-purpose Flour 2/3 cup Semi-Sweet or Dark Chocolate Chips 3/4 cup Maraschino cherries, chopped, then ...

Good Eating Monday: Creamy Layered Lemon Squares

Image
Greetings! I have a flock of Purple Finches visiting the feeder now--it's two pairs of parents bringing their kids to the restaurant!  Driving back from the fitness center this morning we can see an active Osprey nest in a bare tree overlooking the bay. One of the parents was sitting in it. They are a breed of hawk that dines on fish. Very common around here. They mate for life and this particular pair built their first nest in this tree months ago and I've been watching them every time we drive by to the fitness center. My observation impression is this is their 3rd round of off-spring. It looks like they just build a new nest on top of old and go again. Though, I'm not sure about the habits of Osprey.  Today's Good Eating recipe is a no-bake recipe from Honeymaid Graham Crackers that I tried called, "Creamy Layered Lemon Squares." It came out looking just like the picture, but I thought the layer of strawberries in the middle lent an unpleasant sour...

Good Eating Monday: German Chocolate Brownies!

Image
Well, the saga with my car continues.  The problem with it being too dead to start continued. The first time it cranked over with a jump last Monday was the only time jumping it worked.  A day later it was dead. Then we put in a new battery and a day later, dead again.  I've been through this before with this car and it usually means the alternator is gone--despite the fact the parts guy at the parts store  measured it as still working. And perhaps it was--for the last time.  So today, we had to have it towed to the local Pep Boys, about 2 miles away. Fortunately we got the tow through them, so it was only $20 bucks.  Today's Good Eating Recipe is German Brownies! It's a pass-along recipe. An officer in our Bible Study passed to me before she left and I think an officer in her unit in Germany invented the recipe--I'm not sure.  Anyway, it's based on a box of German chocolate cake mix and a tub of Coconut-Pecan frosting that goes with i...
