Good Eating Monday: Orange Dream Cake!

Today's featured Good Eating recipe is "Orange Dream Cake."
This a great cake for your Holiday Entertaining!
You'll need candied orange peels & an orange cake mix and the recipe comes from the back of the Paradise label.
Candied orange peels are available with other candied fruit used for fruitcakes during the Holiday season at your grocery or can be ordered directly from the company @ Paradise
Candied fruit can be stored easily in the freezer.
I recommend using a bundt cake or tube pan for this, if you have one. It looks so pretty
and tastes wonderful!
It's a great alternative if you don't like tradtional fruitcake!

Orange Dream Cake:
Cake Ingredients:
1 package Orange Cake Mix (no substitutions!)
1 package (3.4oz) Vanilla Instant Pudding
1 8 oz container Candied Orange Peel (or substitute one 15oz can drained mandarin oranges & some orange zest if peel is unavailable.)
4 eggs, beaten
1 cup sour cream 
1/3 cup oil (or substitute 1/3 cup natural applesauce for < calorie)
1 teaspoon Orange Extract
Optional:  1/2 cup to 1 cup semi-sweet chocolate chips

Glaze Ingredients:
1 cup powdered sugar
2 Tablespoons orange juice

Directions:
Preheat oven to 350. Grease & flour either 1 bundt tube pan or 2 small loaf pans. (Or spray with Baker's Joy, which is easiest.)
Dredge candied orange peel in flour. In bowl combine cake mix, pudding mix, eggs, sour cream, oil and orange extract and beat at medium speed with mixer. (The instant pudding will make the batter very thick fast!)  Stir in candied fruit or Mandarin oranges (and chocolate chips, if using) and pour into bundt tube pan or 2 small loaf pans. 
Bake for 1 hour until toothpick inserted in center of cake comes out clean. Cool in pan for 15-20 minutes, then turn out onto cooling rack. Once fully cool, place on serving plate.
For Glaze: Combine powdered sugar and juice, then drizzle on cooled cake.
