It finally is raining today after a week of heat.

Today's Garden Pic is another Coneflower blooming out in the front bed by the mailbox.
I raised a group of them from seed last fall & winter, then planted in the spring. This is one of them.

Recently, I've been making box mix brownies for Hubby to take up to the Army post for the Single Soldiers Bible Study he helps facilitate. In the past I've used replaced the oil called for on box with Unsweetened Applesauce--and that works well, but it does give  more of a cakey quality to the Brownies rather then fudgy-chewy. I have a big jar of Coconut Oil for it's multiple uses and it's health benefits in cooking and decided to try that---and it made the most delicious fudgy Brownies I've ever made! So, if you're making box mix Brownies and have Coconut Oil on hand, I highly recommend it! The Dark Chocolate for a 10 x 13 pan is my favorite! I also use Special Dark Chocolate Chips. Brownies 1 box brownie mix for 10 x 13 pan 1/2 cup Coconut Oil  (if it's solid, microwave a few seconds to melt back to liquid) 2 eggs 1/4 cup water Make according to directions. Good Eating Monday: Peach Cobbler Dump Cake!

Yes, I tried another new Pinterest recipe and this one is a winner! The primary dictionary definition of a "Dump Cake," is an easily made cobbler in which cake mix is dumped over canned fruit or pie filling.  This recipe was pinned from Del Monte, which means it's been a recipe that's been created & tested in a corporate test kitchen. That's one benefit of all those label, can & box recipes provided by manufacturers on their product packaging. You can even buy cookbooks featuring nothing, but package & label recipes of which many are vintage. The only changes I'd suggest is add one more 15 oz can of fruit. It can be more peaches, cherry fruit cocktail, regular fruit cocktail or whatever you want. (So, I've noted 4 cans of peaches in the recipe.)   It just needs a little more volume on the fruit quantity.  And stir a teaspoon or two of cinnamon into the fruit! Mama Kat Thursday: My Top 10 Favorite Chocolate Treats!

Today we're talking about chocolate. My favorite chocolate treats and, let's face it, I don't eat candy that's not chocolate. Nothing fruity or sour or minty or chewy or hard and I don't like anything that gums up my molars, like Butterfingers or Clark Bars. So--if I'm going to eat chocolate, here's my Top Ten Favorites: #1) For special occasions, like Valentines, it has to be Mounds. #2)  For everyday, Hershey's Dark Chocolate Kisses are my go-to treat. I always have some in the freezer. I'll have 2 after lunch and sometimes another 2 after dinner. #3)  For Christmas, a dark Chocolate assorted is a favorite gift: I prefer 60% to 80% dark chocolate. A single bar makes goes great with a mug of coffee! #4)  In lieu of a Hershey assorted, I'll take a Dark Ghirardelli: I think I had both the Hershey assortment and a Ghirardelli at Christmas that I gradually worked through by the end of January. #5...

Garden Pic Wednesday: Hosta Blooms!

It's raining today. It's rains most days. Hubby's phone lists the weekly weather with the predicted percentage of rain daily. Today it was "17%." Tomorrow is 42%.  He said, "I wonder how they come up with these percentages?" I jokingly replied,"They use weather lottery balls with percentages on them." Today's Garden Pic are some lavender Hosta blossoms against the pretty background of spotted Calla leaves: These are in my front container garden. Hosta blossoms are either lavender or white. This particular Hosta is a miniature variegated type I got in a mixed Hosta bag 20 years ago. They are very prolific and I've split and planted them tons of places in my garden.

Mama Kat Prompt: Vices Worth Keeping

Yup, time for another tale prompted by Mama Kat. Today's prompt of choice is #5: "What is the one 'vice' you can't give up?"    Quite a number of years ago, in the mid 90's, we visited some friends, who were living in North Carolina at the time and what makes it memorable is the wife declaring that she, "had to give up eating chocolate because it had caffeine in it."  Apparently she was under doctor's orders not to have any sort of caffeine. Why, I don't know, but back then there was a general "caffeine scare" going on. Of course, a lot of scientific back-peddling has occurred since then, as it so often does, and science now declares coffee and chocolate, particularly dark chocolate, as having health benefits.
