Good Eating Monday: Cinnamon Blondies

Today's Good Eating recipe is another new Pinterest recipe I decided to try out. It was on my Mama Kat Thursday list of " 5 New Pins, " a couple weeks ago.  The result : it was much more "cakey" like a coffee cake then blondie-like.   In fact, it'd be perhaps better in a 8x8 square baking dish with raisins added and served as a coffee cake. It doesn't come out chewy. The recipe calls for a 9x9 baking pan and used a 8x10 and it still came out like cake. It was dry tasting, too. Plus the bars are dark colored, so anyone assuming they're about to bite into something chocolate flavored get a little surprise. If I made it again, I'd replace the 1/2 cup butter with applesauce for better moisture and I'd make coffee cake. My M&M Blondie recipe uses only 1/4 teaspoon baking soda and NO baking powder, so if you really want blondies, skipping the baking powder might do the trick. Good Eating Monday: Cheese & Spinach Pita!

I saw this pocket pita sandwich picture in Pinterest and put it on my food idea board to try. Today I tried it for lunch. Unfortunately the pin just linked back to a general blog and not to any specific recipe--which I never appreciate. So--I had to guess the recipe, though it seemed simple enough: one wheat pocket pita, plus fresh spinach and Baby Bell cheese. The original pin also mentioned "tomato sauce" in the description, but I skipped that. It was fine without. Overall, I found it filling and tasty. However, my sandwich DID NOT come out like the picture! Here's my actual sandwich: I used two Light Baby Bells; one for each pita half.  To get as much cheese spilling out as shown in the original Pinterest picture, I think you'd need to use 4 Baby Bells maybe. Funny thing is the original Pin describes this as being only 100 calories! But according to my pita pocket bag nutrition guide, one wheat pita is 150 calories . One light Baby Bell i...

Good Eating Monday: Shrimp-Asparagus Stir-Fry With Lemon Sauce!

Greetings! Last week of February!  My flower beds are starting to come alive! Lot's of nice pictures for Garden Pic Wednesday this week! This weeks Good Eating recipe is another one from Pinterest I decided to test: Shrimp Asparagus Stir-Fry With Lemon Sauce! The picture was so pretty plus I  happen to love shrimp! Hubby is less enthusiastic about them, but willingly gave it a try. He generally likes Chinese. The original recipe called for fresh shrimp I would need to peel & de-vein (ugh ) and fresh asparagus ( $$ )! I also increased the ginger & garlic amounts, because going by the recipe didn't give it enough flavor & I increased the cornstarch to compensate for the added water from using frozen shrimp. The original recipe also called for lemon juice, which I didn't use and I found lemon zest alone made it plenty lemony enough.  (I'm not a huge fan of too much lemon anyway.)
