Good Eating Tuesday: Slow Cooker French Dip Sandwiches

 I've been trying some recipes here and there, but either they weren't noteworthy enough to post or total fails. But yesterday, I found a winner! Slow Cooker French Dip Sandwiches ! We found them yummy and the broth is good enough to make something else with, like soup! What we didn't eat in sandwiches the first night, I'm mixing in with pesto pasta topped with provolone cheese for dinner! Photos are my own and look nearly exactly like the ones with the Pinterest recipe. The recipe calls for 1/2 cup wine, but I substituted 1/4 cup wine vinegar plus 1/4 cup cranberry-apple juice we have on hand. You may also just use apple juice as a replacement. To taste the broth, you wouldn't know I even used fruit juice. I had to wait until after dinner to write about this dish, since I just tried it today! Slow Cooker Mediterranean Chicken!  Also Hubby thought the seasoning was on the bland side, but otherwise it was very good!  So the ingredient list I'm putting here is adjust from the original to what I think will improve the seasoning including a bit more brown sugar, more Oregano, a can of diced Fire Roasted tomatoes, which makes it saucier, & diced onions. The recipe uses dark meat because dark meat performs better in a slow cooker by staying more moist then white meat. The original recipe comes a blog I follow on Google+ called, " Lady Behind the Curtain. The holidays are over. Back to real life. I'll be working on putting away Christmas decorations this week. Today I'm washing bed sheets & other laundry and also decided this window to do a thorough clean-up around the guest bedroom window. Winter water condensation creates mold on the caulk at the edge and being the window I see least, I think I missed cleaning it this past spring, so it's in serious need of attention. Today's Good Eating recipe is for White Bean & Meat Stew that's based on a Turkish recipe.   I have a little Turkish cookbook written by Gulseren Ramazanoglu that I bought years ago in the late 70's at the Air Force Base bookstore when I was stationed in Turkey that serves as the inspiration point for a recipe that has become by own.   What makes this recipe  deliciously different from plain o' American ham & beans is the tomatoes, Bell Pepper & Paprika that give it a rich, smoky flavor! Welcome to a new week in September! Good news: I was able to finish my back patio drainage project today. Also planted a new miniature rose, a red one, in the front bed. Todays Good Eating recipe is one I tried from my "Food Ideas" board in Pinterest for Slow-Cooker Teriyaki Chicken. I liked it enough to make again, though I'd reduce the recipe. It calls for 12 boneless chicken thighs (2 packs), which would be great for a family of 4 to 6, but I'm just feeding 2 of us, so it made way too many leftovers. Next time, I'll reduce it to just one pack of thighs. I also snipped green onions into mine, though they're not mentioned in the ingredients; just pictured. And I thickened the juice right in the slow-cooker rather then moving it around: I removed the meat, mixed in the cornstarch and turned the cooker on high for 20-30 min.
