Good Eating Monday: Bread Machine Lemon Loaf
Today's Good Eating recipe is a Bread Machine Lemon Quick Bread.
Technically it is "cake," since you'll be using a Lemon cake mix and the "Cake" cycle to make it, but what you get is more dense, like a quick bread, which is why I call it a "Loaf."
I wanted a quick bread, so this was perfect!
You treat it like a poke cake, poking holes in the hot cake while it's still in the baking pan once done with a long wooden skewer, then pour the lemon glaze over the top and let cool.
Bread Machine Lemon Loaf
Ingredients:
1 box lemon cake mix
1 cup water
3 eggs, lightly beaten
1/3 cup oil
1 Tablespoon fresh lemon juice
1 teaspoon grated lemon zest
Lemon Glaze:
1/2 cup confectioners sugar
3 Tablespoons fresh lemon juice
Directions:
1) Remove baking pan from bread machine. Add wet ingredients first: water, eggs, oil, lemon juice and zest, then add the cake mix on top.
2) Place bread pan back in bread machine and press "Cake," cycle.
While bread is baking, make Lemon Glaze and set aside.
3) When the bread make signals done, test for doneness with with wooden skewer. If not done, leave on warm cycle 10 to 30 minutes or use "Bake" cycle until baked.

4) Once cake is done, poke holes with wooden skewer all over like a poke cake. Pour Lemon glaze over hot cake. Set bread pan on cooling rack and let bread cool 30 minutes. Then turn loaf out and let completely cool. It slices better if chilled, I think.

Note: I always find getting the paddle out a trick, so I slice the bread or loaf down the middle right above the paddle and around it through the sides and bottom, so the loaf is halved and I can get to it and get it out with hopefully minimum damage.
