Good Eating Monday: Slow-Cooked Sirloin!

Today's recipe is from a Taste of Home magazine featuring slow cooker recipes: Slow-Cooked Sirloin.
Delicious!
 Sirloin steak is cooked in a richly seasoned broth-Worcestershire mix with bell peppers & onions for 4 hours on high, then just thicken broth into gravy and serve sliced over rice or mashed potatoes!  
It's simple and easy. 
I bought a tray of 2-sirloin steaks from the meat department, because I wanted enough for two meals for us, so we could each have half a steak, about 5, maybe 6 oz. 
(I mean, really, who wants to eat just 3 oz of steak?)
The double-pack was cheaper then buying them singly. They were each 4 inches by 8 inches--not super big.
For a family of 4, I believe you'd need at least two steaks.

Slow-Cooked Sirloin
Ingredients
1 Beef top Sirloin Steak (or even two)
1 Tablespoon olive oil
1 medium onion, cut into 1 inch chunks
1 medium green bell pepper, cut into 1 inch chunks
1 can (14 1/2oz) reduced-sodium beef broth 
1/4 cup Worcestershire sauce
1/4 teaspoon dill weed
1/4 teaspoon dried thyme
1/4 teaspoon pepper
1/4 teaspoon
Dash of red pepper flakes to taste

To Thicken Broth After Meat is Cooked:
2 Tablespoons cornstarch
2 Tablespoons water

Directions:
Spray inside of slow cooker with cooking spray.
Place onion and green pepper in slow-cooker.
In a skillet, add olive oil and brown beef on both sides, then lay the steak on top of the onions and peppers.

In a bowl: combine broth, Worcestershire & seasoning and pour over top of steak and vegetables.

Cover and cook on HIGH for 3 - 4 hours or until meat reaches desired tenderness.(Even with 2 steaks, this is plenty of time)

At end of cooking time, remove beef and keep warm.
Now thicken broth with cornstarch. Combine cornstarch with water and mix until smooth, then add a bit of hot broth to it to bring it up to same temp as broth, then add the cornstarch mix.
Cover and cook on HIGH a little longer, until thickened, between 15 and 30 minutes.(I actually needed 3 Tablespoons of cornstarch. I stirred in 2, didn't think it thick enough, then added a 3rd Tablespoon of cornstarch. Mixed with water, of course.)

Plate the steak sliced over either rice or mashed potatoes with a healthy veggie or salad side.
