Good Eating Monday: Bacon, Cabbage Noodles!

Bacon, Cabbage & Noodles! 
It's a easy, tasty and an excellent side dish!
It's basically a style of Haluski, which is the Slavic/Polish name for this dish, though they don't usually use bacon, but the bacon adds extra flavor! 
Just cook up some wide noodles, drain, fry up a little bacon, then saute everything else together in a skillet and done.
(I use Real Bacon Bits instead of frying up bacon, because it's less messy, so you can do that as well.)
I think if you wanted it to be a meal, just thin slice in your favorite style of Kielbasa and add at the same time as onions to skillet.

Serves 4.

Bacon, Cabbage & Noodles
Ingredients
About 2 cups uncooked Wide Egg Noodles (I used about half a bag)
1/4 teaspoon Paprika
1/4 teaspoon Onion Powder
1/4 teaspoon dried Oregano
1/4 teaspoon Salt
2 pinches of Black Pepper
4 slices of Bacon
1 large Onion cut in half, then slice in very thin half moons
1/2 head of Cabbage, sliced very thin, then those slices in half so cabbage is small pieces
1 cloves of garlic, minced
Optional: 1 pinch Cayenne Pepper 

Directions:
Boil & drain your noodles being careful to just cook them al dente, which means they're still slightly firm because you'll be cooking them in the skillet a bit more later.

In a small bowl: combine paprika, onion powder, oregano, salt, pepper (and cayenne if using.)

In skillet: cook bacon till nearly done & remove.
(If you're using Bacon Bits instead of frying bacon, you'll need a Tablespoon or two of Olive Oil to cook your onions & cabbage in instead of bacon grease.)
Add onions and cook 2 or 3 minutes, then add cabbage and cook until tender for about 10 minutes, stirring all the while so the dish browns, but doesn't burn.
Add garlic and cook an additional minute. 
Then add drained noodles and seasonings from small bowl and stir to combine, cooking an extra 2 or 3 minutes to heat through and combine flavors.
Serve right away.

Having made this, I didn't think a mere pinch of red pepper made any real taste differenc at all.
 I happened to have a left-over hot turkey sausage that I microwaved, then sliced into my serving of Haluski and that was super good together! Yum. 
So, if you like spicy, I think you can add a little more red pepper.
Keep in mind, this dish is delicious with spicy sausage added!
