Good Eating Tuesday: Easy Slow Cooker Taco Chili

Image
I tried this recipe for Slow Cooker Taco Chili (or Soup if you like it thinner) last weekend. It was the best Taco Chili recipe I've tried. It came from my MeWe food group I participate in. (MeWe is a social media much nicer & safer then Facebook.) Just add canned tomatoes, beans and corn, then brown some meat with onions, add a couple seasoning packets and cook on Low 5- 6 hours.  I prefer a thick chili to soup, so added 2 to 3 Tablespoons of cornstarch. That's it. Make & serve with cornbread. Yum! This recipe fills a 6 quart slow cooker, so definitely you want to fix this for 6 to 8 people!  (Photo is my own bowl full) Easy Slow Cooker Taco Chili 3 (15oz) cans fire roasted diced tomatoes, undrained 2 (15oz) cans low-sodium black beans, undrained 2 (15oz) cans low-sodium red kidney beans, undrained 2 (15oz) cans corn, undrained 1 lb. lean ground beef 1/2 cup diced onion 1 clove garlic, minced  1 packet taco seasoning 1 packet dry ranch dressing Directions:...

Good Eating Monday: Slow Cooker Hobo Dinner!

Image
I'm actually trying this recipe as I write---it's in the slow cooker now: Slow Cooker Hobo Dinner! I like cooking two things at once and I love meat-loaf and not having to use my oven to make it. I omitted all the onion powder, since I don't keep any on hand. Instead I added minced garlic and dried basil to my meat-loaf, because I like more flavor, and stirred dried Rosemary in with the potatoes instead of using cheese. I'll give you the recipe as-is and you can make you own taste adjustments. Slow Cooker Hobo Dinner Ingredients: 1 lb lean ground beef (90% lean) 2 large eggs 1/4 cup catsup 1/2 cup diced onion 1/4 teaspoon salt 1/4 teaspoon pepper 1/4 teaspoon onion powder 15 saltine crackers, crushed  (or, instead of saltines, sub the equivalent, about 1/2  cup of either bread crumbs or quick oats or a little more, as needed.) 1/4 cup catsup 1/2 cup diced onion 1/4 teaspoon salt 1/4 teaspoon pepper 1/4 teaspoon onion powder 15 saltine crac...

Good Eating Monday: Slow Cooker Chicken Parmesan!

Image
Chicken Parmesan in a slow cooker, you ask?  Yes and this recipe is fabulous!  Everyone on Sunday loved it.  It's super easy, too! It just takes diced tomatoes, tomato paste, garlic, Italian seasoning, bread chicken pieces and a 8 oz block of Mozzarella cheese! I did add fresh sliced green Bell Peppers and slicked baby Portabella mushrooms to my sauce. And I used breaded chicken tenders, thawed, then cut in half, though, because I wanted better pieces. You should allow a minimum of 3 hours and 15 minutes prior to serving time to make this dish:  the sauce is cooked alone first for a couple hours, then the chicken is added for the last hour prior to serving, then 15 minutes before serving, you top it with Mozzarella  slices ! (Do not use shredded cheese for this recipe!) Photo is my mine dish. It tasted as yummy as it looks!
