The Mama Kat blog writing prompt today is to," Share a Favorite Slow Cooker Recipe":

And the winner is:
Slow Cooker Chicken Parmesan!


This is the best slow cooker recipe I've tried this year. I make it often and it's going to be the "Recipe of the Year" our Christmas letter this year!
The secret to this recipe is to use frozen breaded breast chicken  pieces or chunks or nuggets and a sliced block of Mozzarella cheese to give it that ooey-gooeyness of  classic Chicken Parm!
This dish is very warm and filling! A great meal for winter!

Slow Cooker Chicken Parmesan Recipe
Ingredients:
1 bag fully cooked Breaded Chicken, thawed (it can be nuggets, sliced or larger pieces you cut in half.)
1 8oz block of Part-Skim Mozzarella Cheese, cut into 1/4 inch slices
halved tenders
For Sauce:
1 28 oz can Diced Tomatoes
1 15 oz can Diced Tomatoes with Onion & Garlic 
1 6 oz can of Tomato Paste
2 cloves garlic, minced
salt & pepper to taste
1 to 2 teaspoons dried Oregano
1 to 2 teaspoons dried Basil

Optional Additions to Sauce if you like chunky: 1 fresh Bell Pepper, sliced into strips
1 cup sliced fresh Baby Portabella Mushrooms

Directions:
1)  Spray slow cooker with oil cooking spray and add all sauce ingredients: diced tomatoes, garlic, seasoning, optional peppers & mushrooms.
2)  Cover & cook on high 3 hours, adding chicken after two hours to cook for the last hour in the sauce. Make sure the chicken gets well covered by sauce. Cover and cook another hour.

3)  Then, 15 min prior to serving, top with sliced cheese. Cover and let melt. Turn slower-cooker to warm.

4)  Serve over spaghetti noodles or pasta or your choice!
(I like Fettuccine myself)

I like to use breaded tenders, but I cut them in half. That gave me 8 servings. The original recipe recommended breaded nuggets or slices.

This looks really good! Mary has switched away from the slow cooker to the Instant Pot; wonder what it would take to adapt the recipe? I'll have to ask her...
