Good Eating Monday: Chocolate Peppermint Crinkles!



 Christmas is only one week away! According to a news bit I saw, today is the busiest mail day for the post office, too!

Today's Good Eating Christmas Cookie Recipe is:
Chocolate Mint Crinkles

Sometimes called "Black & Whites."

They became one of my annual Christmas cookies after I planted some Chocolate Mint in my herb garden a couple years ago and they give me a way to use it!
Even so, I usually I still have to add about 1/8 teaspoon of mint extract, because dried mint is not as strong as extract.
I'm not a big one of for anything mint, but I find these cookies delightful, despite that, probably because the mint in them isn't overwhelming.
Chocolate Peppermint CrinklesIngredients

1 cup unsweetened cocoa powder1 teaspoon peppermint extract
2 cups white sugar                                   


2 cups all-purpose unbleached flour
1/2 cup vegetable oil                                          

2 teaspoons baking powder
4 eggs                                                          

1/2 teaspoon salt
1 teaspoon vanilla extract                                  

1/2 cup confectioners sugar ( I usually need more then this amount---at least a cup!)
Directions
In a medium bowl, mix together cocoa, white sugar, and vegetable oil. Beat in eggs one at a time, then stir in the vanilla. Combine the flour, baking powder, and salt; stir into the cocoa mixture. Cover dough, and chill for at least 4 hours.
Preheat oven to 350 degrees. Line cookie sheets with parchment paper. If not using parchment paper, coat the cookie sheets with cooking spray. Place confectioner sugar into a small bowl. Roll dough into one inch balls. Coat each ball in confectioners sugar before placing onto prepared cookie sheets.
Bake in preheated oven for 10 to 12 minutes. Let stand on the cookie sheet for a minute before transferring to wire racks or wax paper to cool. Yields about 4 dozen.
